A Really Good Day

Today was a great day! Since the weather started cooling off, I’ve been spending a lot of time in my kitchen. When I get into one of these cooking moods, I tend to cook more food than my diners can eat. So today I decided to treat our Tuesday knitters to a delicious lunch. No, I didn’t push my leftovers off on them. Here is what was on today’s lunch menu:
Black Bean & Rice Stew
Gratin Dauphinois
Petits Pots de Crème au Chocolat
Fresh Rolls

I’ve shared my Gratin Dauphinois recipe with you all before, and I’ll share the Black Beans & the “chocolate thingy” recipe with you at the end of today’s little post.

Machelle finished her Einstein Coat and it looks fabulous! She used Cascade’s Eco Wool.
The kits for the Dog Walking Mitts arrived today. I emailed everyone this afternoon who signed up for the whole shebang. We’ll have some kits left over if you are interested. The color combinations are fantastic!
We also received the new Addi Bamboo Click sets. I was a bit concerned when we received the preliminary pictures that the cases were lined with granny panty print fabric, but they are much more fabulous than we expected. With vibrant lime green cases and silky leaf print fabric linings, I’m happy to report that these fabulous needles DO come in cases that are very très chic! Only a limited number of sets are currently available so get one before they’re all gone!

mexico.jpgIt looks like my lady of leisure cooking days will be coming to an end for a bit. I’m getting ready to embark on another major project that has to be complete before I leave for Mexico. Yes, yours truly is going on a REAL vacation and will get to miss out on my least favorite holiday - Thanksgiving. I know it’s un-American or whatever to not like Thanksgiving, but I’ll save my little rant about that for another day. And when I return from Mexico it will be time for….get ready….the 24 Days of SWAK. Yes, I haven’t forgotten about our holiday blogging fun.

And without further adieu, here’s some recipes for you!

    1-16oz package black beans
    1/2 C brown rice
    1 package dry onion soup mix
    1/4 tsp garlic powder
    1/4 tsp pepper
    1/8 tsp season salt
    1/8 tsp cayenne pepper
    3/4 C sliced celery
    3-4 sliced carrots
    1 tbs parsley
    6 drops Tobasco
    1 cup+ water (add extra if the beans cook down)
    2-48 oz cans chicken broth

    Rinse beans and soak overnight. Pour water off beans and combine all ingredients. Simmer over low heat 6-8 hours.

    2 C milk
    1 vanilla bean
    6 oz Baker’s German Chocolate
    4 tbs water
    5 large egg yolks
    3 tbs sugar

    Split vanilla bean in half lengthwise, and scoop out seeds. Add seeds and bean halves to milk. Bring to a boil, remove from heat and cover to infuse. Add water to chocolate and melt over boiling water. Whisk egg yolks until thick and pale then beat in sugar. Add hot milk gradually to melted chocolate, then pour mixture into beaten egg and sugar, stirring constantly. Blend well and strain. Fill lightly-greased, small ramekins with mixture. Place in baking dish and add boiling water, 1/2 to 2/3 deep around the ramekins. Bake at 350º for approximately 20-30 minutes. Creams are ready when just set. Cool on a rack, then chill. Top with fresh whipped cream.

    Are you sure you want to go to Mexico, just when we’re finally getting cooler weather? Just kidding….have a great time!
